Why do lots of greek surnames ends with AKI(S) ?

Surnames that ends with aki(s) originally come from KRITI. When KRITI was dominated by the turkish, those invaders forced the cretans to add this end to their original surname, this, just to humiliate them, as AKI means "small".

As an example, a small bottle of water will be said NERAKI as NERO means "water" and AKI means "small"
